We love it paired with grilled fish and spicy Chinese takeout. OR, if you're feeling something classic, pay homage to the birthplace of this wine with a charcuterie of Crottin de Chavignol (soft ripened goat cheese) and some Jambon d'Auvergne (cured pork hind leg) from around the corner in the Rhone Valley. Thomas Labaille has vines averaging thirty years old with some much older on the famously steep slope
